Pale ash heartwood against dark sapele heartwood. Heartwood is the innermost part of the tree, which makes it the oldest part, so it's denser and has a grain the rest of the tree doesn't.

Living with it
Rinse it, wipe it with a sponge, dry off the water, then let it air dry standing on its feet. Don't leave it soaking or in direct sun: wood is still alive and can warp.
If it starts to look dull, rub in a little of any food-safe oil you have (olive, sunflower) with a lint-free cloth. Sticky means too much oil. Wipe the extra off with kitchen towel.
